Countdown to Winter Break: 4 Delectable Holiday Cookie Recipes

Tis’ the season for holiday baking!  What’s better than a batch of fresh cookies to add to the holiday cheer?  Here are four types of holiday cookies, attached with full recipes, that you need to bake with your friends and family this year.  

1. Snickerdoodles

A holiday favorite, this quick, easy recipe takes only 35 minutes.  To make them, you’ll need half a cup of salted butter, softened, half a cup of vegetable shortening, one and a half cups plus two tablespoons of sugar, two medium eggs, one and a half cups of all-purpose flour, two teaspoons of Cream of Tartar, one teaspoon of baking soda, one-fourths teaspoon of fine salt, and two teaspoons of ground cinnamon.  This recipe makes about four dozen cookies.

2. Stained Glass Cookies

This non-traditional recipe will put a fun spin on your holiday baking.  Baking these stained glass cookies could make a fun activity to do with little kids!  This recipe does, however, take longer than the others on this list. It may seem a little daunting at first, but the final product will be worth it!  You’ll need unsalted butter, sugar, eggs, vanilla extract, all-purpose flour, and some brightly colored hard candies like Jolly Ranchers. The ideal number of cookies to bake, using this recipe, is around 18.

3. Chocolate Biscotti

4. Soft Gingersnap Cookies

These classic cookies will certainly be a hit, and the strong, sweet ginger aroma will fill your home with holiday cheer.  The recipe calls for all-purpose flour, baking powder, salt, ground ginger, ground cinnamon, ground cloves, nutmeg, unsalted butter at room temperature, packed light brown sugar, a large egg, vanilla extract, molasses, and granulated sugar to roll the cookie dough in.  The recipe yields three dozen cookies and takes about 25 minutes to whip up.
